Hey hey hey! Do you ever get a song in your head that you just can't stop singing? Well thanks to my meal prep, I am chanting Gwen Stefani's 'Hollaback' Song- repeat after me.... "Let me hear you say. This sh*t is bananas, B-A-N-A-N-A-S" (you're welcome- let me know how long that stays in your head!)
One of my favorite things to meal prep ( and if you know me I don't really like to meal prep, unless it takes me less than 30 minutes) is bananas for my nice cream. I am a NICE CREAM junkie! I will admit it, no shame here! But seriously, how much do you love nice cream? If you haven't tried it, put that on the top of your list- you will be forever changed- I promise! I will admit, I have been a little judgmental when it came to what bananas I used for my recipes. I wish I could say I never met a banana I didn't, well eat.. but that would be a lie. I used to look at the dark spotty ones with disgust ( unless I was making banana bread- which that was because they mashed up easier and were less work than their yellow/greener friends- it's true!). So I would chopped up and freeze the greenest/yellowest bananas I could find and I thought I was doing pretty good. Little did I know, the darker/spottier ones are full of major nutritious benefits!
* One fun fact about fully ripened bananas is that they produce a substance called TNF (Tumor Necrosis Factor). Which , in real people words, means that ripe bananas have anti-cancer qualities as they combat abnormal cells. The more dark spots a banana has, the higher its immunity quality will be.
* Riper bananas are easier to digest than the greener ones. The reason why is cause of the higher glycemic index. So if you are wanting to avoid a ton of sugar - you may opt for the greener ones. Just keep in mind that the greener ones may cause the bloat and gas game due to the higher resistant starch levels.
So never judge a fruit by it's spots y'all!
