Sriracha Potato Slices

The potato, mainly known as comfort food, gets a bad rap. When you think of potatoes the things that pop in your mind right away are french fries and mashed potatoes, right? And most of the time, both of these are cooked in fatty greases, which kills any of the goodness that these little gems possess, but hell they are soooo good right? Totally worth devouring every now in then, trust me I get it! But once you truly start thinking about the food you eat and what it does not only to your body but your mind, you will start looking at your food in a totally new way. Plus there are so many healthier ways to make some of your faves, that once you start it is really hard to go back to the junky way. Good food wins every single time, I promise!


So last week, I was at Whole Foods and I have to say that I do load up on bananas and potatoes. I do get some weird looks from people but haven't ever had anyone really comment on what was in my basket, until now. There was this lady that made a comment on the amount of potatoes I had in my cart and she stated that potatoes are loaded with carbs and make you fat. I smiled and kindly responded that they are actually really healthy for you, and that the only reason people think this way is because every single time we see a potato in any form (french fries, mashed etc.) they are loaded up with grease, cheese, sour cream, bacon etc. Where we go wrong ( and this isn't just with potatoes) is when we take the natural state of a veggie, fruit or whole grain and cook it with nasty junk ( like fatty greases, cheese, sour cream etc.) and any nutrients that we started with is gone by the time the finished product arrives on our plates.

Eating foods that come from the earth will not make you gain weight ( they actually do the reverse). It's time that we take back our plates and demand that they be filled with food that will have us thriving and flourishing rather than lethargic and overweight.  There is absolutely no reason to be scared of high carb, starch or sugar when it comes from colorful, leafy, wholesome goodness. What we all need to be terrified of is when these items are taken from their natural state and are fried, mashed, greased up with other processed junk. 

I want you to learn to eat without guilt and to learn to love to eat by the means of the earth vs. the means of man made. When you eat from the earth, you will see a change in the way you look, but more importantly how you feel from the inside out. 


So today I am going to give you a delicious recipe for my potato slices. They are amazing to have on their own or as a side to any meal. They are easy to make and are perfect when you are craving something a little sinful but you are only fooling your tastebuds, cause these beauts are actually good for you, since they are loaded with Vitamin B6, Vitamin C, Potassium and Fiber. And the nutritional yeast, gives it a yummy cheesy flavor ( if you have never experimented with nutritional yeast, I highly suggest trying it now). It's crazy good and can be used in lots of different recipes. 


Sriracha Potato Slices


1 Russet Potato ( peeled and sliced)

Pepper to taste

1-2 tbsp. of olive oil 

2 tbsp. nutritional yeast

2 tbsp. of Sriracha ( more if you want it spicier)

1 tbsp. of fresh lime juice ( optional)



1. Wash, peel and cut your potato. I did mine using a knife and slices were about a quarter of an inch thick. 

2. In a mixing bowl, mix the olive oil, nutritional yeast, sriracha and lime together. I started with 1 tbsp. of olive oil and added in more if needed. The mix might look a little chunky, clumpy when mixing it together, but it's how it should look. 

3. Drop in the potato slices ( a few at a time) until they are all in and covered with the mixture. 

4. Place on baking sheet ( make sure you lay them out nicely vs. having them on top of each other)

5. Bake at 350 for 20 minutes turning them over after 10 minutes. I like mine a little crispy so I did the full 20 minutes, but if you don't want them crispy, then take out around the 18 minute mark.
