Macadamia Nut ‘Cheesy’ Zucchini Boats

I love anything that has the word ‘Cheese’ in it… especially when it’s a fully raw dish. Not only am I fueling my body with amazing nutrients but I am also feeding my cravings for some comfort food ( insert cheese here) but it’s all healthy and fully raw! Win-Win
Macadamia Nuts are so delicious and are ridiculously good for you. Take a look at some of the health benefits these crazy nuts have:
- A rich source of Vitamin A, iron, protein, thiamin, riboflavin, niacin and folates.
- Macadamia Nuts contain moderate amounts of zinc, copper, calcium, phosphorus, potassium and magnesium.
- Full of antioxidants like polyphenols, Amino acids, flavones and selenium, which are great to achieve that glowing skin we all love and crave.
- Aids in weight loss: People usually avoid eating macadamia thinking that it’s loaded with fats and cholesterol. However, the fat in macadamia is monounsaturated fats which helps promote weight loss. So eat up hotties!
This recipe is insanely easy… I am talking about only five minutes from prep to blend to food in mouth. YES, that easy. So give this yummy ‘Cheesy’ recipe a try the next time you have a snack attack or to complement any entrée- heck this could even be your main dish!
What You Need:
- 'Cheesy" Spread
- 1½ cup Macadamia Nut
- ⅓ cup filtered water
- 4 tbsp. fresh lemon juice
- 1 small garlic clove
- ½ tsp of dill ( dry herb)
- sea salt, to taste
- black pepper, to taste
- Boats
- Zucchini, 2-3
- Cherry Tomatoes , 8-10 halved
- chili flakes, to taste
- Combine all ingredients for the 'cheesy' spread in a blender. (a Nutribullet was used here) Blend until smooth
- Slice zucchini into thin slices and cut cherry tomatoes into halves
- Spread the 'cheesy' spread onto each zucchini slice, the top with tomatoes
- Optional: sprinkle dill and chili flakes
- Serve and Enjoy!
