Avocado Sushi Rolls

Never in a million years did I ever think I would try DIY sushi rolls… never say never, right? I do not like to spend a lot of time in the kitchen. If I can’t get a meal (prepped, cooked and ready to devour) in 30 minutes or less, then I have no desire. So the thought of making my own sushi rolls, not only did it overwhelm me, but the process just seemed really complicated. That is why I have a sushi place on speed dial that delivers delicious vegan rolls right to my door step. But there is something about prepping/cooking your own meals. Not only is it healthier (majority of the time) but it also brings positive energy into the food and that in itself is good for the body and soul.

 

 

 

So let’s get our roll on beauties. These veggie rolls that I made are not only delicious, but you can throw these together in 10 minutes or less- start to finish. Now my first attempt probably took me 15 minutes, but I got hung up at the roll, flip what the heck am I doing part. But after you do it once, it gets easier and you will be on your way to be a professional sushi chief. Ok, well maybe professional is a bit much…. but you will get better the more you make.

 

What you need:

1 avocado (mashed with chunks)

1/2 carrot (shredded)

1/2 zucchini (chopped or spiralized)

1/2 cup alpha sprouts

Sesame seeds

Sauce (inspired by Nutrition Stripped)

4 tbsp. yellow mustard

4 tbsp. nutritional yeast

1 tbsp. sriracha sauce or to taste (I used 4 tbsp. but I like it spicy)

2 tbsp. low-sodium tamari sauce

Directions:

Mix all ingredients together and set aside. Play around with this… you may find that you like more/less nutritional yeast or more mustard etc. It’s all about taste.

Makin’ the rolls:

Place nori, shiny side down. Place a thin layer of sauce on the end closest to you.

Mash, chop, spiral your veggies and then place a layer of avocado, carrots, zucchini, alpha sprouts on top of the sauce (end closest to you).

Now time to roll; Take a bit of water and using your finger, dab a strip of water on the back edge of the nori (it’ll help it stick together when it’s rolled). Start rolling from the end closest to you. Roll until you can’t roll any longer. You can leave as one big roll, or cut in half or cut into sushi style bites if you wish. I only cut into half, the sushi style bites just seem like an extra step to me. Again, the rolling part will get easier as you go, I promise!

Repeat all steps to prepare your second roll.
