Avocado Blueberry Salad

The summers in Texas are extremely long and HOT, pretty much brutal! So, I tend to fuel up on lots of dishes that are not only easy to throw together, but are also very cool and refreshing... really anything that doesn't involve a stove or oven. Think gazpacho, green juice, salads and champagne. Ok... ok...so champagne isn't technically food...but it's cool, refreshing and has some serious health benefits, give a girl a break! A little known fact about champagne is that it’s just as healthy for your heart as a glass of red is. This is because it’s made from red, as well as white, grapes, and therefore contains a lot of resveratrol. This is an important antioxidant that reduces bad cholesterol and prevents damage to your blood vessels. Cheers beauties!

There is nothing better than putting a different twist on your every day salad, and that is why I just love this Avocado Blueberry one! It's so easy, full of nutrients and there is so much that you can do with this. It can be your main dish, a side dish, a healthier dip option, etc. For realz... so many choices!

I like to throw it in a wrap; Ezekiel tortilla with hummus, it's a delicious sami alternative.

What you need:

1 avocado

1 tomato, chopped ( make sure to buy organic since tomatoes are on the dirty dozen list)

1 cup of fresh blueberries ( organic is best)

1 cup of corn ( fresh is best but canned works)

1/2 lime or lemon

Olive Oil and Balsamic to taste

Directions:

  • Prep all the vegetables by washing, slicing, dicing, or chopping.
  • Slice the avocado in half and simply scoop out the avocado into chunks  ( I used my avocado cuber but scooping out in chunks works well too) 
  • Combine all the ingredients in a large salad bowl
  • Drizzle with Olive Oil, Balsamic to taste ( I used 1/2 tbsp. of each)
  • Squeeze your lime or lemon juice on top, mixing everything one last time
  • Serve and Enjoy!

    Currently I have been grubbin'  on this every day this week. I am a bit obsessed you could say. I try and eat raw during the day, so this little dish is my go-to, and you can add in lots of different veggie/fruit to change it up! Few options to try:

    Strawberries, Raspberries, Cucumbers, Pineapple, Zucchini, Peas
