Chocolate. Peanut Butter. Banana. Strawberry. Overnight Oats. Sounds crazy delicious and sinful right? Well guess what... these oats are amazingly good but without the guilt! Heck YES!
Eating good food doesn't have to taste blah and bland. Nutritious foods, like these Chocolate PB Overnight Oats, are packed full of deliciousness and you don’t have to worry about them going straight to the hips. Which, in my book, makes them a daily must have!
Not to mention that they are very easy to toss together (that is if you take 5 minutes at night to prepare them)…. Nothing is worse than waking up and craving a bowl of oats and you forgot to whip them up the night before. Trust me, it’s like when you want nice cream and you don’t have any frozen bananas… it’s the worst! Eating good food doesn't have to be overly complicated. Most of the time the simplest recipes are the most flavorful and usually will take you 10 minutes from start to finish.
The one thing I learned when I overcame my food demons, basically when I went 100% plant based nearly 7 years ago, was that I can’t be afraid of eating food. Now, I know that might sound a little crazy to some… being afraid of eating food. But my mind was so messed up for the longest time that yes, I was eating all the wrong things (binge eating was my middle name) or I wasn’t eating anything at all, there was nothing balanced or healthy about how I was living. I was so controlled by food and what I was and wasn’t eating that if you would have placed this bowl of chocolate yumminess in front of me, I would have been terrified to eat it. Bizarre right?! But when you fuel your body with good food it changes the mind, the body and more importantly the soul. So don’t be afraid to try something new. You can make BIG changes in your life by simply changing the way you eat and that doesn’t mean jumping on the next fad diet or restricting yourself of things that you love. (ummm… hello, have you seen the pics for these oats?) When you are eating good food, especially food that comes from the ground (think veggies, fruits, grains, lentils) you are fueling some good vibes that will radiate out. If you think you will never overcome your battle with yourself, the food you eat, etc., you have to start by accepting beautiful you just as YOU are right now, in this very moment. That is the first step to getting on the right track, your very own unique track.
I am really excited about some fun projects that will be launching soon on Sun Lovin’ Roots. When I started this crazy adventure of mine, I knew I wanted to create some tees that had fun sayings related to living a balanced lifestyle. Balance is huge to me, I didn't have it for so long in my life, I was basically a walking nightmare dressed like a daydream (thank you T Swift) but I hid it all so well from everyone in my life. So BALANCE is what this brand stands for. I am not perfect whatsoever, nor do I want to be. Nobody is perfect. My journey of being perfectly imperfect has lead me to this very moment, living out a dream that is becoming something more than I could have ever have imagined and I will be sharing my personal story very soon with you all on here. Even though it’s completely nerve racking to share about my past (even current) struggles, I know it’s good for the soul to get it out there and it it helps just one person not go down the path I have, then it will be worth it. Until then… try these oats ASAP.
Chunky Monkey Overnight Oats
1/2 cup old fashioned oats
1/2 tbsp. chia seeds
1/2 cup unsweetened almond milk
1 tbsp. organic maple syrup
1 tbsp. of unsweetened cocoa or carob powder
1/2 banana, sliced
5 small strawberries, sliced
